/Anyone who knows me knows I’m a foodie! When I come across a healthy recipe that sounds too good to pass up, I immediately add the ingredients to my next grocery list and get to work making it. This year, I discovered some of my all-time favorite recipes – from savory proteins and soups, to healthier versions of sweet treats. Below, I’ve listed out our top 10 recipes from this year – I encourage you to try one whichever one (or two) calls your name! These recipes are well worth the effort, trust me.
1. Easy Roasted Artichokes from The Mediterranean Dish
I love every single ingredient in this recipe – when I saw garlic, lemon, and shallot, I was already sold, but add capers, dill, and artichokes to the mix? I’m in heaven! I’ve made a lot of artichoke recipes over the years, but this dish takes the cake. The umami capers, fresh lemon, and delicious dill vinaigrette come together in a symphony of flavors that can’t be missed. I’ll never stop making this recipe!
2. Grilled Swordfish with Tomatoes from Bon Appetit
This past summer, I made this grilled swordfish at least three times! With salty, buttery olives and fresh cherry tomatoes, this dish begs to be eaten outside, alongside a crisp glass of white wine. And don’t worry, you don’t have to be a master griller to make this work – a cast iron grill pan on the stove will do!
3. Easy Turmeric Baked Chicken With Fennel from The Mediterranean Dish
Some dishes are showstoppers – and I have to say, this is one. With white wine, fennel, and plenty of warming spices, this turmeric chicken recipe hits every note… savory, acidic, umami, with just a touch of sweetness. It makes six servings in just under an hour and requires minimal dishes and active stove time – just throw it in the oven and you’re good to go!
4. Tuscan Garlic Salmon Skillet with Spinach and Tomato
Salmon is one of my favorite fish (tied with branzino, but that’s usually my order when I eat out at a restaurant) and this Tuscan Garlic Salmon was a standout recipe this year. Imagine the most succulent, flavorful salmon filets, surrounded by tomatoes, basil, spinach, and garlic… that’s this dish. And as a bonus, it’s almost as visually stunning as it is delicious. 5. Healthy Lemon Bars from Ambitious Kitchen
Okay hear me out – these are gluten-free and dairy free, and yet they’re somehow the best lemon bars I’ve ever had! Made with just four ingredients (including butter and maple syrup for natural sweetness), these are a definite crowd pleaser and no one will ever know they’re the “healthier” version. Shake up your usual holiday cookie plate – whip up a batch of these lemon bars!
6. Coconut Vegetable Curry from Love & Lemons
When the temperature starts to drop, I immediately start making curry every week. This vegetarian Coconut Curry is so easy to make for a weeknight dinner, and it freezes beautifully. I love serving this with brown rice, and when I’m craving more protein, I’ll add in some chicken or tofu. If you’ve been wanting to try out a curry recipe, this is the one!
7. Chicken Quinoa Bowl from Aberdeen’s Kitchen
Speaking of chicken, I could eat this chicken quinoa beet with herb gremolata for lunch every day without fail. With kale, beets, blood orange, fresh basil, parsley, and lemon zest, this bowl is packed with flavor, fiber, and micronutrients. I love to prep a large batch of the ingredients ahead of time – the quinoa, the kale, etc. – and store them separately so I can throw together multiple bowls throughout the week.
8. Red Curry Salmon from Skinnytaste
This recipe takes two of my favorites – salmon and curry – and brings them together in the best way. The salmon is coated in a sweet curry rub, and the sauce combines coconut milk, ginger, lime juice, veggies, and herbs… the result is a savory Asian fusion dish that you’ll want to make daily. 9. Crock Pot Curry Lentil Soup with Spinach from the Roasted Root
I would be remiss if I didn’t include a soup on this list, especially since everyone loved this super easy Curry Lentil soup! Lentils are full of plant-based protein and fiber, and all of the veggies in this soup make it feel hearty and light at the same time. If you’ve been itching to bring out your Crock Pot, this is the recipe for you. (And if you don’t have a Crock Pot, you can just use a large stock pot or Dutch oven!)
10. Cottage Cheese Banana Bread from RachLMansfield
Of course I had to end this list on a sweet note – with the revolutionary cottage cheese banana bread from RachLMansfield. Low in sugar, gluten free, and high in protein, this banana bread is moist, not too sweet, and perfectly filling. And with only eight ingredients, it’s far and away the easiest banana bread recipe I’ve ever come across.
